Ingredients
  • 3 pieces Tomato (Roma; seeds removed, diced)
  • 2 pieces Avocado (diced)
  • 1/2  pieces Red onion (diced)
  • 1 1/2 cup Black beans (cooked)
  • 1 1/2 cup Black-eyed peas (cooked)
  • 1 1/2 cup Corn
  • piece Red bell pepper (diced)
  • 1/3  cup Cilantro (chopped)
  • Dressing
  • 1/4  cup Olive oil
  • 1 piece Lime (juiced)
  • 2 tsp Red wine vinegar
  • 1 tsp Honey (or use monk fruit sweetener)
  • 1/2 tsp Table salt
  • 1/2  tsp Black pepper
  • 1/4  tsp Garlic powder
Instructions
  • Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.​
  • In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, honey, salt, pepper, and garlic powder.
  • Pour dressing over other ingredients and toss until well combined. 
  • Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.
